KEVIN

Man, I'm doing pretty good. I don't know. I, it's like weird. Can you believe we're already almost through with the second month of 2026? Like it feels like things are flying by and, uh, I don't know. Things are, things are good. How about you, man?

CRAIG

I'm good. Like, I, I think today was like the last bastion of cold weather for the year.

KEVIN

Yeah, I think so too.

CRAIG

So, which sucks.

KEVIN

Yeah. So I, did you know that this is an El Niño year?

CRAIG

Oh, really?

KEVIN

Yeah, it is. Which means 2 things. Number one, it, it, it, El Niño could or could not show up. We don't know. But if it does, means number one, it's, it's gonna be wet.

CRAIG

Mhmm.

KEVIN

But number 2, hot. Hot. Those are the 2 things that, that really that brings. So I don't know. We'll see.

CRAIG

And it seems like there's people old enough to vote now that probably wouldn't even know what you're talking about.

KEVIN

I know. You're probably right. El Niño, the child.

CRAIG

They're like, what are these? Are they talking about children? Are they stealing children? You can't, you can't be doing that with all the Epstein stuff, man.

KEVIN

Oh my goodness.

CRAIG

Children are children.

KEVIN

Oh, that's so true. You can't be taking anyone. Yeah. Nancy. Nope. Kids. Nancy Guthrie. Like this whole thing. I don't know, dude. Have you been watching any of that stuff?

CRAIG

You know, they found her.

KEVIN

Yeah.

CRAIG

That's crazy.

KEVIN

I know. Yeah. Just today.

CRAIG

Was it today?

KEVIN

I think so.

CRAIG

It's crazy.

KEVIN

Yeah. Crazy. Yeah.

CRAIG

So anyway, that's like the weirdest kidnapping story I've heard in forever, man.

KEVIN

Yeah. Weird. Well, there, I think we're gonna be uncovering stuff with that for a while.

CRAIG

I'm sure.

KEVIN

But I'm sure. Hey, I got, I got a weird story to tell you.

CRAIG

Uh, lay it on me.

KEVIN

So, um, you know me and how much I like AI. Uh-huh. So, um, I, I was frustrated the other day because I went to the fridge. We got an outdoor garage fridge.

CRAIG

Uh-huh.

KEVIN

Because I'm an adult. And, um, it's just for drinks.

CRAIG

Okay.

KEVIN

That, I mean, it, it's overflow if it needs to be.

CRAIG

Yeah.

KEVIN

Yeah. But it's for drinks, if I'm being honest. That's really what it's for. And I pulled a drink out, started drinking it, and I'm like, that's not very cold.

CRAIG

Mm-hmm.

KEVIN

That's not very cold at all. And so I go look and the refrigerator is sitting at 53 degrees. Ooh. This isn't good. Especially since the freezer is sitting at -7 degrees.

CRAIG

Uh.

KEVIN

And I'm like, all right, we got a weird discrepancy going on. And I'm like, ah, I don't wanna get a new fridge. So, uh, what do I do? I go to ChatGPT. Uh-huh. And I'm like, hey, what's going on? My, my freezer is at -7 and my refrigerator's at 53. By the way, I talk to my AI like that.

CRAIG

Oh, you just, you just use the, the, the talk, the conversational option.

KEVIN

Well, not, Not exactly. I have another AI that is a voice AI that I use that integrates in.

CRAIG

Okay.

KEVIN

So I just talked to it normally, and it was— it, it, it trained— it, like, puts that into the prompt and then submits it. So I'll show it to you. It's called WhisperFlow. It's really cool.

CRAIG

Okay.

KEVIN

So anyway, it came back and said, hey, that obviously is a problem. Do these things. Go check. I need to know— it basically said, I need to know what's going on here. I want you to go check the vent coming into the refrigerator because here's what's happening. Your freezer produces all the cold air and it shoves it over to the refrigerator. Go put your hand in front of the vent and see if you feel anything. It's like, no, I don't feel anything. I said, okay, look inside the vent and see if it's like it's blocked, if there's— if the flap is, is keeping it, you know, from air getting in. And I'm like, no, man, it looks open. And so it said, okay, um, it could be one of these 2

KEVIN

things. So here's what I want you to do next. I want you to remove the back panel on in, on the inside of the freezer. I want you to unplug it, remove that panel, and, and show me what you see. Okay. So I don't know if people know this out there, but I take pictures and feed it to AI all the time.

CRAIG

I do the same thing. Yeah.

KEVIN

So, I mean, I was even like, is this what you want me to remove? And it's like, yes, what you're seeing is this. That's exactly what you're— so I'm like, I've never done this before in my life. I do not know what I'm doing. This is— but it's clearly not working.

CRAIG

Yeah.

KEVIN

So what am I gonna hurt?

CRAIG

What do I have to lose?

KEVIN

Right? Um, and it told me that most likely it's frosted up, like the coils are frosted up. And so I removed the panel and sure enough, They're like— it looks like an ice skating rink.

CRAIG

Uh-huh.

KEVIN

And so I took a picture, and it said, yep, that's exactly what I expected to see. And so it told me, you need to let that thaw out, and it can be one of 3 things. It could either be the heater thermostat, the defroster, or the control board. And probably it's the control board based on this model. I know that that's normally what goes out on these, but you need to thaw it out, plug it back in. It'll probably happen within 3 to 10 days again. But once we know that, it'll confirm what's the end. It's the control board. What it is. And then it's gonna cost this much for this, this much for this, this much for this, but I can show you how to

KEVIN

replace it. And I'm like, what in the world? So I, so I did, I, I let it thaw out. Put that back, put it all back in. It's cooling perfectly. It's been 2 days.

CRAIG

Okay.

KEVIN

It is cooling perfectly right now. And I, I've told my wife, I'm like, ChatGPT told me to hold on. Like, don't get— Oh.

CRAIG

Don't. That's right.

KEVIN

That's right. Like, don't get too excited here because it's probably gonna happen again. But I'll tell you what, like, I, I felt like a man. I'm just telling you right now. Like, I was like, I just diagnosed a problem that I can fix all because I was willing to just be patient, let ChatGPT like diagnose and show me what to do. And because I was ready to call our friends over at Lone Star Appliance Repair.

CRAIG

Sure.

KEVIN

That's what I was getting ready to do. But now I'm kind of like, Can I do this? Can I do this myself? I'm feeling pretty good about it right now.

CRAIG

Yeah.

KEVIN

Isn't that crazy?

CRAIG

Dude, like, I, so many people just don't understand how to use it.

KEVIN

No, you're right. 100%.

CRAIG

Like, it's just, they use it like Google. Yes. And it'll function that way.

KEVIN

It can.

CRAIG

But like, it's just, it's a powerful ally.

KEVIN

Yeah.

CRAIG

That is like a research assistant that is an Encyclopedia Britannica that can actually then think its way through application.

KEVIN

Yeah, yeah, no, it's really impressive. And I know a lot of people are like, I don't want to deal with something like that. I'm like, all right, you go buy a new fridge. I'm going to diagnose mine. And it took me all of about maybe an hour to kind of work through that whole process. And then time to defrost overnight.

CRAIG

I have it working on a project for me right now because I don't— as you know, I have lots of free time.

KEVIN

Yeah.

CRAIG

And so, but there's, there's lots of things that I want to accomplish this year that I want to put in as regular habits, but I know that I can't develop them as like a daily, weekly kind of thing to put into my schedule.

KEVIN

Okay.

CRAIG

And so I told it, and this was after it did an extensive emotional investigation on me.

KEVIN

I would like to read that, please.

CRAIG

Well, no, it was like I did one of those like, hey, I want you to like really like get to know me, hear the things that are important to me, and ask me questions, fill in the gaps.

KEVIN

Yeah.

CRAIG

And then just, you know, interview me.

KEVIN

Yep.

CRAIG

And like, we got like 2 hours and a half deep and I was like, I got to stop.

KEVIN

Yeah.

CRAIG

Like, it's because it got real, real quick.

KEVIN

Yeah.

CRAIG

And it started figuring some stuff out about me and I was like, ooh, I don't want to hear that right now.

KEVIN

Yeah.

CRAIG

But I came back around to that and I was like, hey, I want to interrupt this chat and I want to tell you, like, this is what my current schedule looks like. Here are the things I wanna add into my schedule as habits that I wanna develop this year.

KEVIN

Okay.

CRAIG

I want you to help me find the gaps in my schedule so that I can make these things happen on a regular basis. And then it's, it, and I said, and then ask me any follow-up questions about this to make it make sense.

KEVIN

Right.

CRAIG

And it came back with like a list of like 7 questions that it needed answered. And I was like, I need a day to think about those.

KEVIN

Yeah.

CRAIG

Because it was, it was, they were serious questions.

KEVIN

Oh yeah.

CRAIG

You know, and they're the right questions too. Yes. Yeah. And this is the thing I think a lot of people don't know about it is it can be— and I'm not saying that it is a substitute for a good friend. I'm not replacing you, Kevin. Oh, thank you.

KEVIN

But not yet.

CRAIG

It will, it will respond to you and talk to you in the way in which you tell it to.

KEVIN

Sure.

CRAIG

So if you tell it to be, look, I need you to be honest and I need you to be brutal. but I also need you to be kind.

KEVIN

Yep.

CRAIG

It'll do that.

KEVIN

It will.

CRAIG

Based off— and then it'll do— it'll give you the feedback based off the information that you give it.

KEVIN

Yeah.

CRAIG

So there's no good lying to it.

KEVIN

No. Well, why would you?

CRAIG

It's stupid.

KEVIN

Yeah.

CRAIG

Because you're, like, in your, in your personal life, you're looking for actual, like, plans.

KEVIN

Sure.

CRAIG

And so, like, it's a numbers cruncher. It's gonna actually, like, figure out, okay, you want me to do this, but, like, I know that you have a hard time getting up on Saturday mornings, that kind of, you know, like, that kind of stuff. And, and so it can actually do those things for you.

KEVIN

Yeah.

CRAIG

And, and it can find the gaps and actually make you a more productive person. Sure. And actually take on some of the tasks that you don't wanna do.

KEVIN

Mhmm.

CRAIG

But most people don't wanna put in the time to train it and engage with it in order to make it function the way that it should.

KEVIN

Right. No, you're right. I actually, I'm on the board of a youth conference that's actually coming up this weekend. And last year we had a survey at the end. And it, I mean, it was like a 15-question survey. It was not too long, but it was not, it was comprehensive, but it wasn't too terribly long.

CRAIG

Sure.

KEVIN

We had one for the adults that were there and we had one for the students that were there. And total, I think we got like, almost 200 responses. And so the board was like, we need to know what those responses are. And I was like, I am not a systems analyst and I am not about to look through 200 responses to this survey and try to find the similarities—

CRAIG

The themes.

KEVIN

And the themes and the gaps and the nuances here and there. So what did I do? I downloaded them into CSVs and imported them into AI and said, here are the things that I'm interested in. Here's the type of report that I need you to give me. And within moments, and I, I brought that back to the board and they were like, how did you do this? And I was like, magic. It was magic. But it was like, but those are the types of things that I think that are so super valuable. And, and what you're talking about, like, yeah, like organization and analyzation and trying to, trying to pull out some things that, that you're like, I don't, I don't know what to do with this.

CRAIG

Yeah. Yeah. I, I did something very similar recently with an organization that, uh, I, I sit on the board of and they were, we were trying to figure out some things that we could accomplish. Um, but we, we have extensive bylaws.

KEVIN

Mm-hmm.

CRAIG

And so we had had this long vision meeting of things that we want to do with the organization.

KEVIN

Sure.

CRAIG

And they were like, well, how do we get these things done? And how do we communicate to people that we want to accomplish them? And so I just took everybody's ideas and I took a picture because we whiteboarded it.

KEVIN

Oh yeah.

CRAIG

So I took a picture of the whiteboard and then I uploaded the PDF of the bylaws and I said, hey, These are the things that the board wants to accomplish. Can we do these things based off the bylaws? And if so, how?

KEVIN

Nice. Right?

CRAIG

And so it spit it right. I mean, it read all the bylaws and it said, you can do this, you can do this, you can't do this. Here's why because bylaw, ba ba ba. And so I was able to then submit that report within like fifteen minutes of being done with the meeting.

KEVIN

Yeah.

CRAIG

I sent that back to all the board members and was like, hey, this is what our bylaws say. based off the things that we said that we wanted to do. Here you go.

KEVIN

Right.

CRAIG

And they're like, what the hell? How did you do that? You're a genius.

KEVIN

You're like, well, no, I'm maybe not the genius, but what I am is I'm not stupid. Like, I'm using my resources, right?

CRAIG

Well, not only that, I mean, like, the value of that is if you've ever been in a meeting, like any sort of like executive meeting like that, like everyone forgets what you talked about.

KEVIN

Absolutely.

CRAIG

And so like, if you are unable to follow up within 30 minutes of that meeting, Like everyone's just gonna be playing catch up at the next meeting.

KEVIN

Sure. And you know what you could have done to make that even better is you could have like recorded that entire meeting.

CRAIG

I did.

KEVIN

And upload the transcript.

CRAIG

I did.

KEVIN

So, so there you go. So now you've got the whiteboard, you've got the transcript, and you got the bylaws.

CRAIG

Well, so you don't, you actually don't have to upload the transcript. It'll actually listen to audio files.

KEVIN

It will.

CRAIG

Um, you can just upload the audio.

KEVIN

Sure.

CRAIG

Um, like the transcript's probably good, but like it's, it's doing the same thing that the transcription Yeah. You know, uh, software's doing.

KEVIN

This is pretty incredible though.

It is.

KEVIN

So, you know what else is incredible?

CRAIG

Hmm.

KEVIN

Pizza ovens.

CRAIG

Oh, dude. We had so much fun.

KEVIN

So, uh, let, let, do you wanna explain what—

CRAIG

no, this is, this is your, this is your thing, man.

KEVIN

All right.

CRAIG

So you set this thing up. I'm, I'm just along for the ride, baby. Happily.

KEVIN

Happily along for the ride. So, well, um, so here's the deal. We, Uh, we reached out to, uh, Pizza Oven Company. Because I had— I— We talked a couple weeks ago that my family is heavily invested in pizza.

CRAIG

Right.

KEVIN

We love pizza. My kids, I have— Oh, I'm so proud of my kids, because every day of the week, if we had pizza, they would be happy. So, like, I've done a good job raising them.

CRAIG

Yeah.

KEVIN

Um... And I'm in this new phase of, like, making dough and... Like just the whole thing is so intriguing to me. And so I joined a pizza group on Facebook and a lot of people were talking about this pizza oven brand that I'd never heard of called Gozney, G-O-Z-N-E-Y.

CRAIG

Yeah.

KEVIN

Gozney. I've later found out that Gozney is a name. So the owner's name is Tom Gozney. And Anyway, he, he kind of came from a, a commercial background, a commercial pizza background. He was like, look, I wanna make really good pizza ovens for people that love to be outdoors.

CRAIG

Yeah.

KEVIN

And people that, you know, want a residential opportunity. And so I just reached out to him and I was like, hey, you know, we'd love to review one of your products if that's something that y'all do. And it just so happened that they are launching a brand new product on March 3rd, and today is February 23rd. So they said, look, we would love to send this to you. Give us your honest feedback and we'll send you the pizza oven and the accessories. And so we got it in last week.

CRAIG

Yeah. And so, I mean, disclaimer, little asterisk here. They did not pay us to review the oven.

KEVIN

They did not.

CRAIG

So, but they did send us the oven and the accessories.

KEVIN

Yes, they sent us the oven, they sent us the accessories. So I wanna go through kind of what we have here, first of all. I wanna, and we'll show some videos of like what we've got. But first of all, I am gonna show a few videos. We took some videos and we're gonna post a bunch more stuff over the next week or two of some of the things that we did. during the review. So this is kind of— kind of stay tuned for some of those on social media, Facebook, YouTube, that kind of stuff. But first of all, we've got the— this is the pizza oven here. It is called the Arc Lite. So Gosney actually has—

KEVIN

they have 3 basic lines of pizza ovens. One of them is the Dome Series. So they've got 2 larger options, and one of them will do an 18-inch pizza or 2 12-inch pizzas or 3 10-inch pizzas at a time.

CRAIG

Mm-hmm.

KEVIN

So it'll, it'll really put the, put the pizza through. They've also, that's their XL. They've also got another one that'll do a 16-inch pizza, but then they've got an Arc series, and this is what this is part of. It's part of their Arc series. So they've got an Arc XL, 16-inch pizzas, the Arc, which is 14-inch pizzas, and this is the Arc Lite. It is for 12-inch pizzas. And they got one more called the Tread, which is kind of a portable model. But, um, so this, this one is specifically just a 12-inch pizza oven. It is not for, you know, large pizzas, but it is portable. Like, it's, it's lightweight. It was easy for us to, to

KEVIN

unbox and, um, kind of Work through it. It, it has a couple really cool things about it. Number one, the, the gas line. So it's a propane oven. The gas line is already attached, and literally all you gotta do is hook it up to a propane tank.

CRAIG

Yep.

KEVIN

I mean, that took me how long? No time at all. Yeah.

CRAIG

Like, like, I think, I think when we were doing the, like, unboxing of it, like, it took us, like, 5 minutes to unpack it and get it hooked up.

KEVIN

Yeah.

CRAIG

There's nothing, like, as long as you knew like the stone goes here, the thing goes here, the guard goes here. I mean like, and the instructions were super clear. Like it was no big deal to unpack it.

KEVIN

Right, and they've actually got videos on their website about how to unpack it and all that kind of stuff. It's super, super simple. This one is an off-black color. And like I said, it's propane. It's priced at $399. So it's very affordable. affordable. And, uh, it only weighed, uh, 26 pounds. So it's really lightweight. And that's with the stone in it, which stone's probably close to half the weight. Um, but, uh, very, very, very cool. And it's got a warranty. Uh, it's got a 1-year warranty. It has a 5-year extended warranty that is available for it. Um, but man, we, we decided here's what we were gonna do. We're gonna unbox a few things. So I'll tell you about some of the accessories. that we got. I was very thankful for some of these accessories because,

KEVIN

well, frankly, it's—

CRAIG

I don't know that we could have used it without them.

KEVIN

No, we— there are some accessories that are essential whenever you're cooking pizzas. All right. So the very first one that is super, super helpful is this, which is a pizza peel. All right. So you got to have a pizza peel. It's what you literally put the pizza onto in order to get it into the pizza oven. And then they gave us a book. Super cool. It— this book, uh, has all kinds of stuff in it. It's got history of pizza. It's got information about different styles of pizza. You got your Neapolitan, your New York, your Chicago, like all the different types of pizzas. It's also got some recipes, tons of recipes in there, uh, with, you know, making sauce, making the dough. Here's different pizzas that you can create. Really,

KEVIN

really cool. Uh, they also gave us a cover for the actual, uh, pizza oven. Because this is an outdoor oven and you're supposed to keep it outdoors.

CRAIG

Yes.

KEVIN

I mean, you're not really gonna wanna bring this inside.

CRAIG

There's no reason to bring it inside.

KEVIN

None.

CRAIG

Unless you wanna burn your home down.

KEVIN

No. Well, yes, please don't bring it inside to cook with. If you wanna put it in your garage, I guess you can to store, but it's meant to stay outside. So it's, they left us a cover. And then also, this was super cool, a dough cutter. So what I'll say is that this thing was super, like heavy duty.

CRAIG

Oh, the dough cutter?

KEVIN

Yeah. Yeah, it was pretty awesome.

CRAIG

It could be a weapon.

KEVIN

It could be a weapon. Um, but they, they make, they make packages like dough packs that all you gotta do is add water, let it proof up, and it'll make 4 dough balls.

CRAIG

Yeah.

KEVIN

And so that dough cutter is super simple to just kind of cut 'em up and you can put those in the fridge or the free— fridge overnight, uh, the freezer for a while. Um, really, really cool. And then, uh, they gave us an infrared heat gun, uh, like a temp gun. Temp gun, like a thermometer. There's no thermometer on the oven itself, so you just shoot this thing toward the pizza stone and tell you how hot it was. Um, we'll get to that in just a minute. And they also gave us, uh, the other essential piece, which is a turning, turning peel.

CRAIG

Turning peel, yeah.

KEVIN

Which is small. It's this small round, uh, peel that you use to literally turn the pizza. And why is that?

CRAIG

Well, giant flat spatula.

KEVIN

That's, that's exactly right. So, uh, here's another little video of, of the pizza. And if you notice the, the actual oven, you notice the flame comes out of one side and it has this like patented system to work because it's a dome. It kind of arcs over, which is where they get the, the name for this. It kind of arcs over the, the top of that pizza oven so that it cooks the top of the pizza as well as that side. But if you don't turn it, as we found out, if you don't turn it quickly, quickly, it's gonna, it's gonna burn on one side and the other side's not gonna be as cooked. So you gotta use that turning peel

KEVIN

to really turn it. So, so that was kind of what we got. Now, first thing we did is we turned it on. And just to see, okay, how does this thing light? So you actually lit it. What was the process for lighting it?

CRAIG

Uh, it, so it's, it's, it's, it's like any other propane, like grill.

KEVIN

Okay.

CRAIG

It's, it's, there's one knob and that, that, that was actually something I really liked about this one. There's nothing, because on some of the bigger models and it's not to like dog on them or anything like that, but like the bigger ones actually have like a digital readout for the temperature and things like that. This one has like one knob.

KEVIN

That's it.

CRAIG

And it's, it's a push knob to release the, the propane into the primer, and then you click it, and it's— it seems like it's a piezo, which means you don't have to put like a battery or anything like that. So as you click it, it ignites the piezo, and then that's what ignites the gas. And you have to hold it in in order for that to, to warm up, to continue to allow the gas through. And then once that warms up, you just turn it on to the temperature that you want.

KEVIN

That's it.

CRAIG

All right, so it took me 2 clicks right from the get-go to ignite the thing.

KEVIN

And the only reason it took 2 clicks is because we didn't, we didn't do it right the first time.

CRAIG

Right.

KEVIN

It was pretty simple to figure out though.

CRAIG

Yeah. Yeah.

KEVIN

Um, and we wanted to know how long it took it to get up to temp. And—

CRAIG

Not long.

KEVIN

Not long. In fact, um, so about 15 minutes in, I went and checked it. Actually, no, it was 10 minutes in. I went and checked it and it was already at 725. I went in 5 minutes later and it was at 925. So 15 to 20 minutes, it was over 900 degrees. And so I thought, all right, let's do this. And so we went, we, we, we got our first pizza ready. Um, and, uh, I'm showing you that, that video now. Uh, we got our first pizza ready. This thing was at 956 degrees whenever I launched it.

CRAIG

Now the top end, the top end's supposed to be 900.

KEVIN

It, well, it said 950.

CRAIG

So did it say 950?

KEVIN

I think 950 is top. It got to 956 is where it was when we launched this pizza. And dude, it took about a minute to cook this pizza.

CRAIG

Yeah. The entire video of that first pizza cooking was a minute and 49 seconds.

KEVIN

Yeah.

CRAIG

And part of that was us actually putting the pizza in off the peel and taking it out and taking it out. Right.

KEVIN

So, I mean, you, you told me pretty quickly, you're like, you better start tarring that thing. And, uh, no. Full confession: I've never had a pizza oven that I need to turn the pizza, so I'm learning this on the fly. As you can see in the video, like, you're like, Kevin, you were doing that really poorly, because I did not know what I was doing.

CRAIG

You had it figured out by the end of the video.

KEVIN

Well, I did, but right now it's almost about to fall out of the pizza oven because I'm so not understanding what I'm doing.

CRAIG

Which, honestly, is a testament to the oven and the accessories, is like, these 2 goofballs can kinda figure it out. Now, I, like, when I was in high school, I worked at 2 pizzerias.

KEVIN

Yeah.

CRAIG

But like, I worked at 2 conveyor belt pizzerias.

KEVIN

That's different.

CRAIG

Totally different. Totally different.

KEVIN

Of course. So, uh, as you can see right now, like, the, the crust got a little black, uh, especially on one side, uh, because this thing just did not take very long, uh, for it to, to cook at all at 950. Like, I think it's safe to say that's too hot.

CRAIG

I think it's safe to say.

CRAIG

I mean, I think the only way you could justify that is if you're doing a really, really thin crust pizza. I mean, I think you could get away with it then.

KEVIN

Sure.

CRAIG

But for what we were doing, the Neapolitan and the New York style and all, it would've been— So everyone that I've shown the video to after that first pizza, and I show it that one 'cause that's the shortest video that we did that night.

KEVIN

Of course.

CRAIG

Um, when we— when you pull that pepperoni pizza out, everyone's like, oh, that's gorgeous.

KEVIN

Yeah.

CRAIG

I'm like, yeah.

KEVIN

And it tasted great.

CRAIG

It did.

KEVIN

It tasted really good.

CRAIG

Like, even—

KEVIN

CRAIG

Was that— was that their dough, though? Was that the Gosney dough?

KEVIN

This one— this one was one of the Gosney doughs. OK. Yes. So what I did is I made, uh, the Neapolitan pack of dough. This was one of their doughs. And man, it— It, it poofed up really good.

CRAIG

Yeah.

KEVIN

And I don't know if that's the right word.

CRAIG

Poof. We'll run with it.

KEVIN

Poofed up really good. And it, I mean, it was great. It tasted— even the parts of that crust that got black, it did not taste—

CRAIG

It didn't taste as charred as it looked.

KEVIN

I expected it to be like brittle, like it was just going to like fall apart. It really wasn't that bad. But I learned a lot along the way. One of the things that I learned is that, first of all, Uh, I'm left-handed. You're left-handed. Mm-hmm. And every video that I watched, I'm, I'm like, all right, I'm gonna try to figure out how to turn these pizzas. Every one that I watched, people were turning it from the left side to the right side. So counterclockwise.

CRAIG

Right.

KEVIN

And once we, we, we made 6 pizzas this night, right? 6 of 'em.

CRAIG

Yes. Yeah.

KEVIN

We did 6 pizzas. We had 7 dough balls. We used 6 of them. I learned for me, and maybe it's just 'cause I'm left-handed, I don't know, going clockwise was the way to turn it.

CRAIG

Okay.

KEVIN

Because I got better at it, didn't I?

CRAIG

Oh yeah, 100%.

KEVIN

Yeah.

CRAIG

I think you had it figured out by number 3.

KEVIN

Okay. Yeah. Yeah, number 3's also the one that we had some trouble with because I think that's the one that broke in the middle. Yeah, it tore.

CRAIG

We had to go clean.

KEVIN

Well, we did have to go clean. We knew it was— it might do that because we got the dough a little bit thin. Um, so we used a couple different types of dough. We used 3 different types of dough, actually.

CRAIG

Yes. So shout out to Ray's Pizza. Yeah.

KEVIN

Uh, in—

CRAIG

at— over at Deacon Baldi's, because we went and got some dough from him as like control.

KEVIN

Yes.

CRAIG

Because Ray's Pizza is like one of my favorite. I think it's the best pizza around, and it's in a food truck.

KEVIN

It's delicious.

CRAIG

Um, which Oddly enough, um, is kind of a thing that Gosney does. I mean, like that a lot of people are doing with the Gosney ovens.

KEVIN

Yeah, they're putting them on, onto food trucks.

CRAIG

Yeah.

KEVIN

Yeah, of course.

CRAIG

I saw this guy, I think his— I think he goes by Doughboy.

KEVIN

Okay.

CRAIG

And he's got 2 of these Gosney ovens inside of a, um, refurbished 2-horse trailer.

KEVIN

Oh, nice.

CRAIG

It's super cool looking.

KEVIN

That's awesome.

CRAIG

Um, and it's like the, the Dome XLs.

KEVIN

Yeah, the big dudes. Yeah, which, you know, you think about it like that, it's good enough to be commercial. Yeah, like that's, that's a cool thing. And honestly, like, at the beginning I was learning this thing just because I've never had one like this. Yeah, it's propane, outdoor, gets so stinking hot. Uh, the one that I— we reviewed last time that I have is an electric one, so it's very, very different. But like you said, by that third one, we, we learned some stuff and we learned how to, how to turn things a lot better. My kids ate it. They thought it was great. My wife was eating it. She thought it was delicious.

CRAIG

Yep.

KEVIN

Honestly, it was, it was really good. Now what we did was we got the temperature down. We were launching them at about between 600 and 650 is where we were really what was the sweet spot. So we had 3 different types of dough. We had the Ray's, and then we had the Gosney pack that we just added water to and let it proof up. And then I had another brand. The brand is called Poco Bero. They're not sponsoring this, but Poco Bero is a—

CRAIG

That's right. They send you dough, pre-made New York-style dough, frozen. And that's what we've been using. It's pretty good. And it cooked up great. Everything that we did honestly cooked up really, really nice in this thing. But so, so what are the kinds that we made?

CRAIG

Well, we— I think we made like 3 pepperonis.

KEVIN

We did. We made 3 pepperonis. Yeah.

CRAIG

I mean, just because it was like we, we were trying them out at different temps, it was different dough and we wanted to see like what the difference would be. And so like the control for us was the pepperoni, the cheese, and the sauce.

KEVIN

Right.

CRAIG

So we wanted to see what the different, the doughs did at different temps to see what that was like. We also made an elk sausage pizza.

KEVIN

Yeah, that was so good.

CRAIG

Which was pretty good.

KEVIN

Yeah.

CRAIG

I liked that one a lot. And then made a semi-traditional one with pepperoni, mushrooms, and blue cheese stuffed olives.

KEVIN

That was so good.

CRAIG

I liked that one a lot.

KEVIN

Yeah.

CRAIG

And then—

KEVIN

That was our first one that whenever we did it, like, we were like, okay, that one was done right.

CRAIG

That one was done right.

KEVIN

That was done. Yeah.

CRAIG

It wasn't, it wasn't like too overcharred. No, it was, you know, yeah, it was, it was really, really nice. And then we did a funky one at the end, which was—

KEVIN

I'm pulling it up right now. So they're looking at it.

CRAIG

So they're looking at it. So what it is, is it's smoked duck breast with fig jam, goat cheese, Parmesan Reggiano, and a balsamic reduction. Yeah.

KEVIN

With arugula.

CRAIG

And then arugula at the end. Obviously not in the oven.

KEVIN

No, not in the oven.

CRAIG

But at the end. Yeah. And all of them were good. I think that one was my favorite.

KEVIN

Yeah, that one. It was almost like a dessert pizza, but even though it had the smoked duck breast on it, It was sweet, but also one of the things we did is we—

CRAIG

Oh, that was the one. Yeah, we did that.

KEVIN

Put olive oil on the entire pizza, but then whenever it came out, we put more olive oil on the crust.

CRAIG

The crust. Yeah.

KEVIN

And then we salted that.

CRAIG

Yep. That made a huge difference. Yeah.

KEVIN

That pink Himalayan salt that we put on the edge of that crust was really good. And so those of you who are watching, like, you're going, oh, Yeah, Kevin, you got a lot better at turning these things. Uh, this actually looks like you meant to do that. Um, and I'll tell you that this one was a challenge mainly because all these others have like sauce on them to keep it weighed down, right? This had fig jam on it.

CRAIG

Yeah.

KEVIN

So it, which was—

CRAIG

And not like a lot.

KEVIN

No, it didn't have a lot, but by the time you—

CRAIG

It was like little dollops.

KEVIN

Like, that's right. That was the, I think that was the challenge is there were dollops of it. So between that and the dollops of goat cheese that was on there, it— I was a little bit concerned that I was going to, like, poke a hole through it whenever I was turning it. But I didn't. I don't know. It worked out. This one we launched at about 650 degrees. And so it took— this video's—

CRAIG

I think that one got launched right at 500.

KEVIN

Was it at 500? So it was a little bit lower?

CRAIG

Yeah.

KEVIN

Well, it still didn't take long. I mean, this entire video is only about 3 and a half minutes long. Mm-hmm. So it's still not taking very long to cook these pizzas.

CRAIG

No, no, no, not, I mean, like, for what you would, what you would typically think about, like, putting, like, a, a pizza in the oven, like a regular, like, convection.

KEVIN

Oh yeah. Because that takes, that takes anywhere from, for us, what we were doing before we got a pizza oven, that was taking 13 to 15 minutes.

CRAIG

Yeah.

KEVIN

Because you can only, and that's like a short time to bake. Right. Yeah. Because you can only really heat an, an indoor oven up to, like, 500 typically. Right. We were, and we were cooking ours based on the dough. You make different dough for for those too.

CRAIG

Yes.

KEVIN

The dough that we made, we cooked at 425. So, you know, with these doughs, they can handle a higher temperature.

CRAIG

Yeah.

KEVIN

And so—

CRAIG

Now, the thing that we didn't get to try that we still want to try is steaks.

KEVIN

Oh yeah. So that's— okay, so let's talk about that for a minute. So there's some things that they talk about are features of this oven, and we're still watching this this pizza here.

CRAIG

Yeah, we're still watching the pizza.

Yeah, he's an idiot. He's an idiot. All right, here's the money shot. Here's the pizza.

CRAIG

The pizza was eatable, all right?

KEVIN

Yeah. Oh man, it's so beautiful. And it's kind of dark outside right now because we started, it was light, and then it got dark. But again, I'll show this is the final product once we got the arugula and the balsamic on there and everything. everything. There's a really, really cool—

CRAIG

um, had you never had a pizza like that before?

KEVIN

No.

CRAIG

Really?

KEVIN

That was the first one.

CRAIG

Dude, those are like— those are some of my favorites. The salty with the sweet. Yeah. And the, and the vinegar. I don't know why. And like, the, the duck breast was, was a risk.

KEVIN

Yeah, sure.

CRAIG

Um, but like, but we had tasted it. We had tasted it before we put it on the pie. Yeah. And it, it kind of had a pastrami taste to it. And, and so like, if you can kind of imagine that with like goat cheese and figs and like, it, it just worked.

KEVIN

It just worked. It was delicious. I, and, and I'll tell you, like, by the time we got to that one, we were full.

CRAIG

Yeah.

KEVIN

We had eaten a lot of pizza at that point. Mm-hmm. I mean, it was 6 pizzas and there were only 5 pe— people in the house. So like, we ate a lot of pizza.

CRAIG

Yeah.

KEVIN

Um, some of the key features that they talk about with this brand new, uh, Arc light, um, is that it's, it's, first of all, it ignites really quickly. The, the controls are super simple. And so there's— can't really mess it up.

CRAIG

No.

KEVIN

Very simple. Um, the next one is that it's, uh, it's got the Gosney DNA built with the very same materials that their Dome series is, is built with. The, the, the insulation in it that I will tell you, I didn't tell you this. I actually put my hand on the top of it when it was at 900 degrees and it was not super hot.

CRAIG

Oh, so it's pretty well insulated.

KEVIN

Yeah, very, very well insulated. So really, really Gosney by design. They talk about that it really will get up to 950 degrees. And I will tell you that is true because we got it up to 956 and I turned it down at that point because I was like, this is too hot. We don't need anything that hot, especially us being the amateurs that we are. But then one of the things that they talk about, a key feature, is that it rolls, like the flame rolls like a natural wood fire because it kind of arcs over the top of it.

CRAIG

Yep.

KEVIN

And so it wraps the food in many ways. And so What they say is like, this is not just good for pizza. You can use it for, um, vegetable, like caramelizing vegetables. You can use it for steaks, uh, depending on what you want to cook. If you want to cook it at high temp, it's a really, really good option for that. Um, and then, uh, it's small. It's, it's lightweight. It's compact. Honestly, like I even made this, uh, point, like I could see myself taking this camping.

CRAIG

Yeah. Like, cause I mean, cause you guys, you guys have the, the RV, right? It could easily be packed up in your RV.

KEVIN

So easy.

CRAIG

Yeah.

KEVIN

Yeah, and, you know, I mean, I wouldn't wanna take my electric like that just because it's really meant to be indoors. This one though, it's outdoors. Like, it'd be awesome.

CRAIG

I do wanna know if some of the accessories are gonna be compatible with the Arc Light.

KEVIN

Okay, like which ones?

CRAIG

Like the Basecamp stand.

KEVIN

Um, that's a good question. Um, I, I actually don't know that.

CRAIG

To me, that would be like a big, uh, value add because like you, you start looking at like the Dome XL and, and the Dome and like they have stands like, and these are for like at-home kitchens, but they have wheels on them.

KEVIN

You can roll it around. Yep.

CRAIG

It makes it easier to get that pizza peel in there.

KEVIN

Yep.

CRAIG

And, and, and the turner and all that kind of stuff. But then like for the um, like the Arc XL and the Arc, they have, they have stands for those as well. But they, for the, um, the Tread, they have like a tripod.

KEVIN

Yeah, it's a little bit different.

CRAIG

Um, is it a tripod or a quad? Looks like it's a quad pod.

KEVIN

Yeah, I think so.

CRAIG

Um, and I'm wondering if that's gonna be something that works with the Arc Light. Because that would, that would make it really convenient for you to take camping. Keeps it up off the ground. You don't have to put it on a wooden table.

KEVIN

Well, they've got, they've got that accessory called the booster as well. The Arc Plus Arc. It's the Arc Plus Arc XL booster. And it would be something to keep it up off the table too. Sure. So I, my guess—

CRAIG

But I like, I like that quad because it kind of puts it where you don't have to bend over as much to look in the oven. And you can, it's right there, kind of like at your shoulders.

KEVIN

Yeah.

CRAIG

Um, just makes it really convenient to use. Um, I'm just curious if it— I, I would imagine, I mean, look, everything I've seen on these guys, like, it looks like it's designed to work with all their stuff. With all their stuff.

KEVIN

Yeah, my, my guess, and it looks like there's on those, uh, because we didn't get one of the stands, but it looks to me like, uh, especially with that, um, with the Arc and Arc XL stand itself. It looks like there is a, um, like a bolt that comes up to the middle to kind of hold it in place is what it looks like.

CRAIG

And it looks like that's what that thing attaches to.

KEVIN

We, we're in the studio, we're not at my house anymore. Um, my guess is that, that that's prob— there's probably something on that, but I'll look when I get home and, uh, we'll reach out to Gosney. They've been, man, they've been so wonderful to work with. I will tell you, like, just a great company to, uh, to converse back and forth with. I'll ask them and we'll update you on that. But that— because that, that really is a great question. I don't know the answer to it.

CRAIG

The same price as the Rockbox.

Yeah.

CRAIG

I think this one has a lot more utility than the Rockbox.

KEVIN

Sure.

CRAIG

I think the Rockbox, let's see, Pioneer, scaled down and portable. Yeah, it's a portable pizza oven. So the Arc Light is, I agree with you. I think the Arc Light is pretty portable.

KEVIN

Yeah.

CRAIG

But I think it's intended to be part of like your outdoor kitchen at home.

KEVIN

Right.

CRAIG

In that regard. And like, look, I think a lot of people's concern would be, well, like, wouldn't the pizzas get cold?

KEVIN

Sure.

CRAIG

As we cook them. And I'm like, no, because it's only taking you 3 minutes to make a pie.

KEVIN

Right.

CRAIG

I mean, just have them ready to go, slicing up. You're gonna finish, you're gonna be halfway through eating the warm one.

KEVIN

That's right.

CRAIG

And the next one's gonna be coming out the oven. We actually had that problem. We did. We ran outta space.

KEVIN

You did.

CRAIG

To actually put all the pizza.

KEVIN

Yep.

CRAIG

Because we didn't, we didn't anticipate them coming out so fast.

KEVIN

No, we didn't. And, and again, you know, this is, this is part of the fun in my opinion. Like if you're, imagine it, if you're a family and you all wanna make your pizza.

CRAIG

Mm-hmm.

KEVIN

Like you get to make your pizza while the other one's getting cooked. It comes out and yours goes in next.

CRAIG

Like, I think that's the fun part of it.

KEVIN

Oh, super fun. Like, We had a great time. Yeah, we did. We had a great time. My kids were just around, you know, they were doing their thing. They'd come in, grab a piece of pizza, and it was a lot of fun. Now, I will tell you a little trick that I've learned over time.

CRAIG

Mm-hmm.

KEVIN

Um, so whenever it comes to building your pizza, uh, you don't wanna build your pizza on the peel because you can't— it's, it's difficult to get it off, to get it off at that point. So you have to, you have to be careful. So what, what I've learned is if you've got like a granite countertop, which is what we have at our, our house, uh, you can make it right there on the countertop. It's super simple. Um, you know, just make it on the, on the countertop. But if you don't have some, something underneath that, it's still difficult to get it onto the peel.

CRAIG

Mm-hmm.

KEVIN

And so what I learned is to use a special type of flour called semolina. Now, I'd never heard of semolina before, but it's kind of a gritty—

CRAIG

It's finely ground cornmeal is what it is.

KEVIN

That's right. And, but if you go to the grocery store, it might be a little more coarsely ground.

CRAIG

Sure.

KEVIN

On Amazon, I'm sure you can buy this at certain places, but on Amazon, there is a brand, and the brand is Semola, S-E-M-O-L-A. Well, I'll actually link it up. Uh, in the show notes, but it's, it's semola rimacinata. And that rimacinata means it's even, it's even finer. And so what I learned is for a while I was using this semolina and it still had that gritty texture a little bit. We had none of that. No, it was—

CRAIG

yeah, we didn't have any of that.

KEVIN

None. Like, I mean, and you can't taste it.

CRAIG

And you can, you can taste it like when you get pizza from like a cheap pizzeria, it has like a sandpaper kind of a grit.

KEVIN

That's right.

CRAIG

On the bottom. And it's not bad for you or anything. It's just a texture thing.

KEVIN

Right.

CRAIG

But like, if you're just wanting to taste like the dough, like this semolina is gonna be way better for you and keep it from sticking.

KEVIN

That's right.

CRAIG

Now it will, like, it'll char the stone.

KEVIN

Yeah.

CRAIG

Like none other.

KEVIN

Which is fine. Because look, we, I told you we had the one that tore. That was just like cheese on the stone. And that just, immediately caught on fire. Caught on fire and was like just burning right there.

CRAIG

Yeah.

KEVIN

And so I was a little bit concerned. I was like, oh man, what is it gonna be like? So we, we kind of scraped off the, the remnants and, and it left the stone black. And so we were like, we still had 3 pizzas to launch.

CRAIG

Yeah.

KEVIN

And none of them had that black on them. Like it wasn't, it wasn't like, oh my goodness, this is crazy. It was totally fine. Not a big deal whatsoever.

CRAIG

Yeah. So I'll give you a quick, fun little tidbit that I learned recently.

KEVIN

Okay.

CRAIG

I was, my daughter has started a business.

KEVIN

Yeah.

CRAIG

Doing food prep for people.

KEVIN

Yeah.

CRAIG

And she's doing awesome. And so I took her down to a fancy schmancy grocery store in downtown Houston called Central Market, which if you're from Houston, it's like the, It's the fanciest of the H-E-Bs.

KEVIN

Sure.

CRAIG

Which I was shocked to learn that you'd never been there. Yeah, I've never been there. But anyway, we were shopping in, we were looking at some pastas.

KEVIN

Okay.

CRAIG

And this guy walks by and he goes, can I tell you some things about pasta? And I think for most people that would be off-putting, but I'm like, no, I wanna know everything you know about pasta because you sound like, tell me what you know.

KEVIN

Sure.

CRAIG

And he starts telling me about, okay, like this, like when you start looking at pastas, here's what to understand is when you're looking at brands from Europe versus brands in America, the brands from Europe, typically they're gonna be a little more expensive, not because there's like a tariff or something like that on there, but because American pastas, they dry them in ovens, whereas in Europe they air dry them. And so it takes longer to produce the pasta than it does in the US.

KEVIN

Interesting.

CRAIG

And he goes, and for whatever reason, Air drying them just makes them have a different texture. It makes them have, it's easier on your stomach. And they're actually using, they don't have, it's all non-GMO stuff over there that they're putting in the ingredients.

KEVIN

Really? That's very interesting.

CRAIG

Yeah, so there's actually a lot of people that have like a gluten intolerance that when they start eating pasta from Europe, all of a sudden it's like, I can have pasta.

KEVIN

Ah.

CRAIG

Yeah, but anyway.

KEVIN

Interesting.

CRAIG

All that to say, He was like, here's the other thing to watch for is if you find a product that has this little blue medallion on it, and he showed me the medallion on some products, and he goes, you'll see that this actually really raises the price. And he goes, what that is, is that's something in the EU that the EU has created a protected product, meaning that product with that seal means that it's only been produced from that region.

KEVIN

It can't— In Italy?

CRAIG

in Italy, in Germany, in France, whatever.

KEVIN

Really?

CRAIG

There's like a medallion.

KEVIN

So this is like a universal medallion?

CRAIG

Yes.

KEVIN

Wow.

CRAIG

And so what they've done is they've recognized that there's certain things that are made in regions that are just better than others. And it doesn't mean that other places can't make them. Sure. They put the medallion on it so that, you know, it's only been produced from the area of its origin.

KEVIN

That's interesting.

CRAIG

And he goes, if you look for that, that'll usually tell you that you've got a good brand.

KEVIN

Really?

CRAIG

Yeah.

KEVIN

That's really super interesting.

CRAIG

So, and I don't even know how to describe it. It's a little like, I'm like, like the size of a dime.

KEVIN

Okay.

CRAIG

On the packaging, it was like a little blue crest.

KEVIN

Interesting.

CRAIG

On the product. And this guy, like, as I'm talking with him, he was a former buyer for like specs and now he's shopping for chefs.

KEVIN

Oh, okay.

CRAIG

And like, he's just out there sourcing products.

KEVIN

And he saw you and was like, I wanna talk to this guy.

CRAIG

Look, I used to go down to that grocery store all the time.

KEVIN

Sure.

CRAIG

I mean, I've never really talked about this much on the show, but I used to have a background in cooking.

KEVIN

Right.

CRAIG

And I used to run into chefs that I knew and they're all like, I'm talking like celebrity chefs.

KEVIN

Really?

CRAIG

And they're shopping for their restaurants.

KEVIN

Wow.

CRAIG

Like they were looking for stuff. They were picking up stuff to do specials at their restaurant that night.

KEVIN

Okay.

CRAIG

She was on MasterChef.

I mean, super talented chef here in Houston.

KEVIN

2 or 3 restaurants in Houston that were just absolutely done. I don't know what she's doing. I need to look that girl up. She was killer. I remember my wife and I went to her restaurant one time and she came and sat down with us for 15, 20 minutes and just told us about everything that we were eating. Just the sweetest lady.

KEVIN

Right.

CRAIG

But anyway, you run into people like that there all the time and they're so nice if they're not in a rush to like, okay, what's that? You know what I mean?

KEVIN

Well, because they love what they do.

CRAIG

Yes.

KEVIN

I mean, and they're good at what they do. And if you're interested, why would you not wanna talk about that?

CRAIG

Yeah.

KEVIN

Yeah.

CRAIG

And I think my daughter was just having an absolute field day in that place.

KEVIN

I bet.

CRAIG

Because there was pieces of fruit that she'd never even heard of. They have this whole container in the produce section where they are growing their own mushrooms in this grocery store. Oh my goodness. And so that was actually where I got some of the ingredients. that we used on the pizza. Okay. That we made. I mean, like, it's like, I want— because I wanted to bring, I wanted to bring the heat. I wanted to see what this thing could do. Sure. I was like, if I'm gonna do it, I'm gonna put some quality stuff in there, um, and, and make a good pie.

KEVIN

Yeah. Um, well, you did.

CRAIG

And dude, that thing— look, that thing performs.

KEVIN

Oh, it does.

CRAIG

Like, I'm, I'm not even kidding. Like, after we, after we got done with this, I was like, okay, like, what, what would it actually cost for me to get the big big boy.

KEVIN

Yeah.

CRAIG

Um, cuz that looks like it would look really cool in my outdoor kitchen.

KEVIN

Well, you've got a really cool outdoor space out here.

CRAIG

Uh-huh. And I, I feel like it needs one. I feel like it does. I feel like it needs one over there.

KEVIN

It does. And, and look, why don't you get it?

CRAIG

Well, you and I have talked many times about just building— oh yeah, a domed wood oven.

KEVIN

Absolutely. You know, and, and I like, because I love it so much. Mm-hmm. And we make pizza every week, at least one time a week. Yeah.

CRAIG

So like, Now we don't do that, but like—

KEVIN

But you would use it.

CRAIG

Oh, 100%. I would use it for more than pizza.

KEVIN

Oh, absolutely. And so here you go.

CRAIG

I don't think a lot of people appreciate that the thing can do 950 degrees.

KEVIN

Right.

CRAIG

Go to your convection oven and see if it will do that. It won't.

KEVIN

It won't.

CRAIG

Just for safety reasons, it won't do that.

KEVIN

I think typically 500 is the most that you can get.

CRAIG

I think so. Your typical, And that's if it's like on broil or something.

KEVIN

That's exactly right. Yeah, you're not getting it nearly that hot.

CRAIG

And high heat can make, I mean, like, the reason that's so, making steaks at that temp, you can put such an incredible crust.

KEVIN

The char you can put on it.

CRAIG

On a rare, medium rare steak.

KEVIN

Oof. And especially if you like, if you do a little, Uh, uh, just lost the, the sous vide on it. Do a sous vide on that thing up to like—

CRAIG

You talking about like a reverse sear?

KEVIN

Yes. Yeah, yeah. Oh, now you're, now you're really talking. Now you're really talking. So here's the deal. I, I think this is a, a fair deal. I mean, I got the ArcLight. You get the Dome XL2.

CRAIG

Okay, I'll do, I'll see what I can come up with.

KEVIN

Yeah, you do the Dome XL2. We will review that.

CRAIG

We'll do a letter writing campaign. That's right.

KEVIN

We'll, we'll review that one. But look, Look, it's only fair. I mean, I did my part.

CRAIG

Sure.

KEVIN

It's your turn to do yours.

CRAIG

Okay.

KEVIN

Um, and, uh, we'll review that sucker. I mean, that would be fun.

CRAIG

That would be fun.

KEVIN

That would be really fun. So I think we need to do it. Um, but so I want to try it.

Like, I want, like, I wanna, I wanna do like 3 pies at a time. I wanna see if I can do it.

KEVIN

It will. So I honestly, I think it might be easier than the 12-inch.

CRAIG

Just because the heat's a little more displaced?

KEVIN

Yeah, and I think that, I think that one of the things that I found challenging about the Arc Lite that I learned and figured it out— it was 3 pizzas in when I figured it out. This is not like rocket science, but you, you have a smaller area with which to actually turn that thing. If I had a, a larger area, then I could move it over, turn it. Like, it, it would probably be a little bit easier.

CRAIG

Yeah.

KEVIN

And I think that, uh, you know, if you had the larger space, it would probably be easier for that in general. But, um, here's—

CRAIG

okay, so here's the other thing I want, want to try this for.

KEVIN

Okay.

CRAIG

I want to roast, uh, garlic cloves.

KEVIN

Oh, at that heat?

CRAIG

Yes.

KEVIN

Really? I never thought about that.

CRAIG

Um, for bread dip.

KEVIN

Okay.

CRAIG

And then I wanna bake the bread in the, in the gazni. Yeah, I wanna like, like, like baking baguettes in there.

KEVIN

Oh, that sounds delicious.

CRAIG

You know, and then, and then pulling that garlic out and mixing that with like balsamic and olive oil and herbs and salt and Parmesan. And then just like bringing that out of the oven.

KEVIN

Yes.

CRAIG

There's a restaurant in Florida, I've talked about it before, and that's what they do. And I'm like, it's the best bread and dip, like, I've just—

KEVIN

You've ever had. I've ever had.

CRAIG

And I want, if I could have that in my backyard, I would be a much fatter man.

KEVIN

Yeah, of course. Which, look, I think we both would. I mean, so that, by the way, the Dome XL 2, it doesn't get any hotter than this ArcLight.

CRAIG

ArcLight, yeah.

KEVIN

It's 950 degrees. That is incredible to me.

CRAIG

But like, I mean, you don't need it hotter than that.

KEVIN

No, there's no reason, but I think, I think there's something to be said about the fact that this little dude can do that.

CRAIG

Yeah, that is impressive.

KEVIN

And so let me just ask the question.

CRAIG

Well, so I was at a meeting tonight.

KEVIN

Okay.

CRAIG

And one of the guys there, he's a big-time caterer.

KEVIN

Oh, okay.

CRAIG

And I said, hey man, have you ever heard of this Gosney company? And he's like, yeah. And I was like, you wanna see this? And he's like, yeah. And I showed him and I was like, look at this, man, we're fixing to make this. I showed him the video of the minute, pizza.

KEVIN

Oh yeah.

CRAIG

And I was like, look, this thing's gonna cook this pizza in, in about 90 seconds. And he goes, shut the fuck up. And he goes, what temperature is that? It's like 950 degrees. And he goes, holy hell.

KEVIN

Yeah. It's so hot, man. And, and, but again, you have to recognize, like, I was standing right in front of this thing. Like, it, it did not, this thing is so well insulated.

CRAIG

You didn't light your beard on fire.

KEVIN

No, I, well, I did not. Thankfully.

CRAIG

We have the video evidence to prove it.

KEVIN

That's right. Thankfully. So here's my question. Like, was it worth it? Like, do you think, like, I mean, clearly you like it well enough to, to buy, but like, if, if someone was going, look, I really wanna get into pizza ovens, would you be like, yes, I think you should consider something like this?

CRAIG

Oh, 100%. Yeah. It's one, it's, it's fun.

KEVIN

Oh, it's so much fun.

CRAIG

Like, you know, it's, there, it's just such a stark difference between sticking like a DiGiorno's in the oven.

KEVIN

Uh-huh.

CRAIG

And then the interactive activity of like a family, like, okay, we're gonna toss the dough, we're gonna get our ingredients, we're gonna— okay, you put that, I'm gonna put— and then we're gonna put it on the thing, we're throwing it in the oven, then we gotta turn it, we gotta actually gotta pay attention, and everyone's excited watching it. And yeah, you know, like, it's, it's, it's a whole experience rather than just like this boring thing that you're gonna throw in the oven that doesn't even taste good.

KEVIN

Right.

CRAIG

You know, and like, if you're gonna— okay, look, is, is pizza like the most nutritious thing for you? No.

KEVIN

Of course not.

CRAIG

So, like, if you're gonna misbehave— this is my philosophy with food. If you're gonna misbehave with food, at least do it with quality.

KEVIN

There you go. There you go.

CRAIG

Like, why would you waste— and, like, sorry to everyone out there— why would you waste those calories on McDonald's? It's such trash.

KEVIN

So true.

CRAIG

Like, if you're gonna do it, go get a good burger.

KEVIN

Yeah, that's true. But this would actually, like, when you make dough like this, that's really the worst part is the dough. Like, from a health perspective.

CRAIG

It depends on what your typical, what your diet looks like.

KEVIN

Sure. But it's not, whenever you make fresh dough like this, it's not nearly as bad as what you're getting out of the DiGiorno either.

CRAIG

Right. Well, like the pizza we made at the end, I mean, that was kind of a salad.

KEVIN

It kind of was a salad.

CRAIG

Yeah.

KEVIN

Well, it had lettuce in it. Yep. It's a salad. But let's talk about that for a minute. Okay, so you talked about like just the expense of certain things. So the dough that you got from Ray's, it was $3.

CRAIG

Yes.

KEVIN

$3 apiece for 2 dough balls that were good size.

CRAIG

2 12-inch pizzas.

KEVIN

2 12-inch pizzas.

CRAIG

Yeah.

KEVIN

It was $6.

CRAIG

And then, I mean, look, do it like this. Just go home and make cheese pizzas.

KEVIN

Sure.

CRAIG

Sauce and cheese, man.

KEVIN

Yeah.

CRAIG

I mean, you're, you're, you're what, $10?

KEVIN

No, no way you're $10.

CRAIG

For 2 pizzas?

KEVIN

Yeah. Oh, for 2 pizzas? No way you're $10.

CRAIG

Really? No, because I mean, for, I mean, like if you got really cheap, if you got really cheap sauce and cheese, You—

KEVIN

it's still— no, it's gonna be cheaper than that.

CRAIG

You think so?

KEVIN

Yes, because I get, uh, and, and it's better to get, uh, like whole milk mozzarella, but it's hard to find. Skim milk mozzarella, you, you need the low moisture. Skim is typically what you're gonna get. Well, you can get a 32-ounce block of cheese for $8 at H-E-B.

CRAIG

Okay.

KEVIN

And for 2 pizzas, I can do 2 pizzas with 1 pound, so 8 ounces.

CRAIG

Okay.

KEVIN

So that's instead of $8, that's $2.

CRAIG

Okay. I see what you're saying. So you're not going to use all of it?

KEVIN

You're not going to use all of it. So you're $6 into 2 dough balls, you're $2 into cheese, and the sauce is like, I think it's like $4 for a jar. And we We went through about 1 and a quarter jars in 6 pizzas.

CRAIG

Yeah.

KEVIN

So you're less than—

CRAIG

Well, 5 because one of them we didn't use sauce on.

KEVIN

That's true. But you're, you're less than $10. If you want to be crazy, it's $10 for 2 pizzas.

CRAIG

Sure.

KEVIN

That's way better than something you're going to get at Domino's.

CRAIG

Yeah. Well, I mean, you could get a little fancy with it if you wanted to. I mean, you could, you could buy the tomatoes and then make the sauce yourself. yourself.

KEVIN

And it's gonna be cheaper at that point.

CRAIG

Probably a little cheaper.

KEVIN

It will be.

CRAIG

Now you could— and then you could take that extra money and buy fancy schmancy mozzarella. Oh, of course. Like the buffalo mozzarella balls and slice it and—

KEVIN

Yeah. Yep.

CRAIG

That's good stuff right there. Yeah. And then, like, with, with, like, the little bit that you have to buy some basil.

KEVIN

Sure.

CRAIG

You know, throw that on there at the end.

KEVIN

Right.

CRAIG

You know, I—

KEVIN

there's— you can experiment.

CRAIG

Yeah.

KEVIN

There's so many options and I think that's one of the things I love about pizza is that, uh, like I tell people this, the worst pizza I ever had, all right, was delicious because it's just, there's so many things you can do with it. Mm-hmm. You can top it so many different ways and it's just, it is a fun experience. Pizza is built around family. Mm-hmm. It just is.

CRAIG

And so I, look, and I, I think that's another, like, just one. I'm dogging on the DiGiorno people here, but you deserve it. Yeah. But I think that's part of it, man, is we, and I think you and I agree with this, is I want to encourage people to actually spend more time around the table.

KEVIN

Yeah.

CRAIG

I think that's important.

KEVIN

I agree.

CRAIG

And I think it's equally as important to involve your family in the making of the meal that then you then sit around the table with. I can't tell you the number of people that I've met that just don't know how to cook.

KEVIN

Oh, sure.

CRAIG

And I'm like, how?

KEVIN

Because they never tried.

CRAIG

Well, it's either that or they just ate macaroni and cheese their entire life.

KEVIN

Yeah.

CRAIG

You know, and it's like, that's boring.

KEVIN

It is.

CRAIG

And gross.

KEVIN

And this, y'all, this is so easy.

CRAIG

It's— that's just the thing.

KEVIN

It is easy. So easy.

CRAIG

And good food is easy.

KEVIN

And look, you might screw up the first couple of pizzas like we did. Uh, and we didn't screw 'em up. They were delicious. But you might screw up one or two times, but you learn it.

CRAIG

Yeah.

KEVIN

You figure it out. And I will tell you this right now, and this is hilarious to me, but, um, the, my, my kids legitimately want me to open a pizzeria. Mm-hmm. And I do not want to, but—

CRAIG

No, you don't.

KEVIN

They legitimately want me to because they're like, your pizza is the best pizza we've ever had.

CRAIG

Uh-huh.

KEVIN

It's not the best pizza in the world.

CRAIG

It's the pizza that they like.

KEVIN

They know. Yeah. It's the pizza they like. In fact, Ryland, my son, was like, uh, he was like, hey, where's the pizza that I like? Because he, he likes pepperoni, but he likes other things. He likes hamburger and Canadian bacon. He likes other things. My daughter, she likes hamburger, mushroom, and onion. That's, that's just what she likes. And so I make it the way they like. So they, they're like, your, your pizza is the best. And so Uh, one day I was like, I was like, yeah, all right, well, time to, time to eat. Come on into the Slice Is Right. And then Daddy's Pizzeria, it's the Slice Is Right. And, uh, they thought that was hilarious.

KEVIN

So now they say the Slice Is Right all the time. But, uh, but that's the thing, right? It, it, you learn, you do it once or twice, you figure it out. Maybe it, maybe it wasn't great. Try it again.

CRAIG

Yeah.

KEVIN

And experiment.

CRAIG

Have some fun.

KEVIN

That's right. And if you honestly, realistically buy an extra dough ball, if you didn't like one, get rid of it. And in 3 minutes or less, you got another one.

CRAIG

Yeah. We had some funky shapes come out of the oven.

KEVIN

We did.

CRAIG

They still tasted good.

KEVIN

They tasted great.

CRAIG

Yeah. So when I was on their website, I meant to bring this up earlier. They have a list of chefs and influencers that use their dough. use their ovens.

KEVIN

Sure.

CRAIG

And one of those guys is Chris Bianco.

KEVIN

Oh, really? You know him?

CRAIG

Yeah. So that's the guy that— remember when I went to Phoenix and I was like, dude, the pizza culture in Phoenix is incredible?

KEVIN

Yeah.

CRAIG

That's the guy that made it happen.

KEVIN

I remember you telling me about him.

CRAIG

And so apparently he uses these.

KEVIN

That's awesome.

CRAIG

Um, that dude's a—

KEVIN

yeah, man, crazy.

CRAIG

I mean, like, one, to like change the entire food culture of a city, of a city like that.

KEVIN

Yeah, I mean, it's impressive.

CRAIG

I mean, everywhere I went had wood-fired pizza, and I'm not even kidding.

KEVIN

That's impressive.

CRAIG

Um, and, and all of them are just trying to play catch-up with him. Sure.

KEVIN

So, well, look, I, I fully endorse Gosney at this point. Uh, the ArcLight was great. Portable, awesome, lightweight. Go get you one at $399. You can, you can research Pizza ovens all day long. Yeah, $399 is a pretty good price.

CRAIG
